Default Huffle Puffle Breakfast Casserole

This is great for Brunch or anytime!

Diced potatoes
Diced onion
Diced green Pepper
Diced mushrooms
Saute the above ingredients together until tender.

Eggs or egg whites scrambled

Any type of meat that you like - whether it be bacon, ham, ground sausage, turkey, steak. Bacon you would cook until crisp and then crumble it and add. Ham, Turkey or Steak you would dice it then cook it and add. Ground sausage brown, drain grease and add.

You can saute the onion, green peppers, mushrooms and potatoes together. Cook the meat separate and then add it. Scramble the eggs separate then add.

Salt and pepper mixture to taste and simmer for 15-20 minutes. OR Can also put mixture into a casserole dish and top with your favorite cheese (sometimes I top it with cheddar cheese, mozzarella cheese and Parmesan cheese) and bake for 15 to 20 minutes until cheese is melted and browned to what you desire.

How much you use of each ingredient depends of what you like and how much you want to make. Can omit onion and/or green pepper and/or mushrooms and/or cheeses.

Serve up with biscuits, rolls or toast. Yummy! My family loves it. I usually make it with leftover baked potatoes and steak.
